Marinated Cheese

1/2 cup olive oil

1/2 cup white wine vinegar

1/2 cup white wine vinegar

1/2 (7.5 oz) jar roasted red peppers, drained & diced

3 green onions, minced

3 tbsp chopped fresh parsley

3 tbsp chopped fresh cilantro

1 tsp chopped fresh cilantro

1/2 tsp salt

1/2 tsp ground pepper

1 (8 oz.) block sharp cheddar cheese

1 (8 oz.) block monterrey jack with peppers

1 (8 oz.) package cream cheese


1Whisk together 1st 3 ingredients until blended.

2Stir in diced red peppers and next 6 ingredients.

3Set aside.

4Cut blocks of cheese in half, lengthwise, then 1/4 thick slices.

5Arrange slices alternating in shallow dish, standing slices on edges.

6Pour marinade over cheese.

7Chill at least 1 hour.

8Transfer to serving tray.
